Mango Dutch Oven Fish (Tilapia, Mahi Mahi, Halibut)
This Mango Dutch Oven Fish recipe is adapted from Elizabeth Yarnell’s Glorious One-Pot Meals (great book to find dutch oven recipes of all shapes and sizes – all are easy).
We use the 2 quart Le Creuset Dutch oven for this recipe.
Preheat oven to 450 degrees.
2 teaspoons olive oil
1 cup rice (we use brown rice)
1 3/4 cup chicken or vegetable broth, or water
1/2 to 3/4 pound fish fillets (tilapia, mahi mahi, halibut, other)
1/4 cup diced mango (we use fresh)
Sea salt and ground pepper
1/2 cup red bell pepper
Soy Sauce
2 to 3 cups spinach
Wipe inside of dutch oven with olive oil. Put rice in dutch oven, add liquids. Put fish on top of rice. Put mango on top of fish. Add salt and pepper. Cover with bell peppers. Top with spinach until pot is filled.
Cover and bake for 40-45 minutes. Eat right away (yay!).
