Dairy-Free Riz au Lait (Rice Pudding!)
This dairy-free riz au lait recipe (rice pudding!) is adapted from Tom Fitzmorris’s New Orleans Food (highly recommended!).
I like making this recipe in our 2-quart Le Creuset dutch oven, but any heavy saucepan will do – I have also made this in our All-Clad 3-quart saucepan.
3/4 cup rice (I use brown rice and cook it in our rice cooker beforehand, other types of rice do not need to be precooked)
4 cups Vanilla Soy Milk
2/3 cup sugar
1/3 cup raisins
2 tablespoons honey
1 tablespoon vanilla (optional since we are using vanilla soy milk)
1/8 teaspoon salt
1/4 teaspoon cinnamon
Rinse rice and put it in saucepan with soy milk, sugar, raisins, honey, vanilla (optional), salt and cinnamon. Bring the ingredients to a boil. Once boiling, reduce heat and simmer for 20-40 minutes (depending on rice and amount of liquid). Stir frequently. Finished when a thick pudding.
Cool to room temperature (if you are patient enough!). Holds well in the refrigerator.
