This Mango Dutch Oven Fish recipe is adapted from Elizabeth Yarnell’s Glorious One-Pot Meals (great book to find dutch oven recipes of all shapes and sizes – all are easy).

We use the 2 quart Le Creuset Dutch oven for this recipe.
Preheat oven to 450 degrees.
2 teaspoons olive oil
1 cup rice (we use brown rice)
1 3/4 cup chicken or vegetable broth, or water
1/2 to 3/4 pound fish fillets (tilapia, mahi mahi, halibut, other)
1/4 cup diced mango (we use fresh)
Sea salt and ground pepper
1/2 cup red bell pepper
Soy Sauce
2 to 3 cups spinach
Wipe inside of dutch oven with olive oil. Put rice in dutch oven, add liquids. Put fish on top of rice. Put mango on top of fish. Add salt and pepper. Cover with bell peppers. Top with spinach until pot is filled.
Cover and bake for 40-45 minutes. Eat right away (yay!).

This dairy-free riz au lait recipe (rice pudding!) is adapted from Tom Fitzmorris’s New Orleans Food (highly recommended!).
I like making this recipe in our 2-quart Le Creuset dutch oven, but any heavy saucepan will do – I have also made this in our All-Clad 3-quart saucepan.
3/4 cup rice (I use brown rice and cook it in our rice cooker beforehand, other types of rice do not need to be precooked)
4 cups Vanilla Soy Milk
2/3 cup sugar
1/3 cup raisins
2 tablespoons honey
1 tablespoon vanilla (optional since we are using vanilla soy milk)
1/8 teaspoon salt
1/4 teaspoon cinnamon
Rinse rice and put it in saucepan with soy milk, sugar, raisins, honey, vanilla (optional), salt and cinnamon. Bring the ingredients to a boil. Once boiling, reduce heat and simmer for 20-40 minutes (depending on rice and amount of liquid). Stir frequently. Finished when a thick pudding.
Cool to room temperature (if you are patient enough!). Holds well in the refrigerator.

This carrot bread is really, really easy, this recipe is adapted from Cooks Illustrated, Baking Illustrated:
Carrot Bread
Preheat oven at 350 degrees.
2.5 cups all-purpose flour
1.25 teaspoon baking powder
1 teaspoon baking soda
1.25 teaspoons cinnamon
0.5 teaspoon nutmeg
0.5 teaspoon salt
Whisk these all together in a medium bowl and set aside.
6-7 medium size carrots (about 1 pound), peeled
Using the shredding disk in the Cuisinart food processor – shred all the carrots, put shredded carrots on top of dry ingredients in bowl, set aside. Rinse out Cuisinart to get rid of carrot residue.
1.5 cups granulated sugar
0.5 cup light brown sugar (I have also used dark brown with fine results)
4 large eggs
1.5 cup vegetable oil
With metal blade in food processor, process eggs and sugar until fully combined (20 seconds). With machine running pour in oil, process until well combined (another 20 seconds). Pour mixture into a large bowl.
Pour carrots and dry ingredients into large bowl as well, mix just until you cannot see any streaks of flour, do not over mix.
Pour into a pan (sprayed with nonstick cooking spray). Bake for 35 to 40 minutes, rotate midway through. It is ready when a knife comes out clean.
